My Favorite Granola

I always have this on hand. I use it as a topping on my yogurt, as a base for trail mixes, or just as a yummy snack.

My favorite, super customizable granola

Ingredients

4 Cups

Old-Fashioned Rolled Oats

1 1/2 Cups

Raw Nuts ( I use walnuts, peanuts, almonds, & cashews)

1 Tsp

Sea Salt

1/2 Tsp

Cinnamon

1/2 Cup

Olive Oil

1/2 Cup

Maple Syrup

1 Tsp

Pure Vanilla Extract

2/3 Cup

Dried Fruit (I use raisins, blueberries, and cranberries)

1/2 Cup

Dark Chocolate Chunks

Instructions

  1. Preheat oven to 350°F. Line a large baking sheet with aluminum foil and coat with cooking spray. Set baking sheet aside.

  2. In a large bowl mix the oats, nuts, salt, and cinnamon.

  3. Add the olive oil, maple syrup, and vanilla. Mix until everything is lightly coated with the wet ingredients.

  4. Pour the granola onto the prepared baking sheet in a thin, even layer.

  5. Bake for 20-25 minutes, or until golden brown. Stir the mixture midway through cooking.

  6. All the granola to cool completely. Add the chocolate chunks and dried fruit.

  7. Crumble the granola and store in an airtight container for 1-2 weeks.
