Blueberry Banana Muffins

These grab and go breakfast muffins are delicious and a nutritious treat!

Ingredients
3 | Large, Ripe Bananas (mashed) |
1/4 Cup | White Sugar |
1/4 Cup | Brown Sugar |
1 | Egg |
1/3 Cup | Melted Butter |
1 Cup | Blueberries (fresh or frozen) |
1 Tsp | Baking Soda |
1 Tsp | Baking Powder |
1 Tsp | Pure Vanilla Extract |
1/2 Tsp | Salt |
1 Cup | All-Purpose Flour |
1/2 Cup | Old-Fashioned Rolled Oats |
Instructions
Preheat oven to 375°.
In a large bowl, combine mashed bananas, white & brown sugars, and egg.
Add melted butter and blueberries to mixture. Mix until fully incorporated.
In a separate bowl, mix baking soda, baking powder, salt, flour, and oats.
Gently stir the dry mixture into the wet mixture.
Pour the mixture into 12 well-greased muffin cups.
Bake for approximately 20 minutes ( check if they are done by inserting a knife into the center of one of the muffins, if the knife is clean when you pull it out, they are done)
This recipe is amazing and super customizable. No brown sugar? Use all white sugar. No eggs? Add an extra banana. No oats? Use extra flour in the same amount. Swap blueberries for chocolate chips or add nuts. The sky's the limit with this staple recipe.
